Just as tasty as my shortbread recipe but in slightly smaller portions!
Ingredients
- 4oz (110g) butter or margarine at room temperature
- 2oz (50g) caster sugar
- 6oz (175g) plain flour, sifted
- extra caster sugar for dusting
Directions
- Preheat oven to 150°C/300°F/Gas Mark 2
- Grease a large baking sheet
- Beat butter with wooden spoon until soft. Then beat in the sugar and then the flour
- Bring the mixture together with spoon and finish with hands to form a paste
- Transfer to a board dusted with caster sugar and roll out to 1/8"/3mm thick
- Use 3" cutter to cut biscuits and arrange on baking sheet
- Bake for 30 minutes
- Cool on wire rack then keep in an airtight box
